A healthy, nutty energy dense snack ball
Ingredients
- 1 cup raw almonds
- 1/4 cup raw macadamia nuts
- 1/4 raw cashews
- 1/4 raw sunflower seeds hulled
- 1/2 cup organic dried apricots
- 1/2 cup dried organic cranberries
- 1/4 cup chia seeds
- 1/3 cup raw cacao nibs
- 1.5 tbsp coconut oil
- 1/4 tsp sea salt
- 1 scoop Vega One Natural
- 1/2 cup raw coconut flakes
Instructions

soak almonds, dried apricots and sunflower seeds for 3 hours (or more) in cold water

drain water, allow to sit for 1 hour to dry and remove excess water

Add all ingredients to a food processor and process for 4-5 minutes

Check mixture occasionally to pull away from sides of food processor

Roll into balls about 1 inch in diameter.

Roll balls into coconut flakes
-
Place in freezer for a couple hours to harden

Store in freezer
Recipe Notes
Eat from frozen.
Substitute your own nuts and seeds to suit your preferences.

I was searched on the HEAL site for a healthy, tasty alternative to my regular homemade energy bars and came across this recipe. I tried it today and was thrilled with how it turned out! I had to make a few substitutions to suit what I had on hand (figs instead of apricots and cocoa powder instead of cacao nibs) and they still turned out great — although I’m sure it will be even better next time with the nibs. Thanks for sharing. I’d love to see more snack recipes like this in the future!
