Cool Cucumber and Avocado Soup
September 9, 2011Hummus is quick and easy to make, so why buy it when you can make it fresh in under 5 minutes. I’m not a fan of canned food, but i make an exception for beans. I always keep some organic chickpeas and kidney beans on hand for quick and easy meals. Why organic? The non organic cans contain EDTA, a chemical preservative, where as the organic ones use citric acid
Ingredients:
1 can Organic chickpeas (save about 1/4 cup of the liquid)
1/2 cup water
3 tbsp olive oil
2 tbsp Tahini (sesame seed butter)
1-2 gloves garlic
1 lemon, juiced
1 tsp salt
Rinse chickpeas well, but save some of the liquid
Mix all ingredients in a blender or food processor and puree until smooth, Use water to achieve desired consistency. Use as a spread or dip on your favourite crackers (Mary’s Wheat Free) or vegetables.
