August 31, 2012Short on time and need a quick but healthy meal in minutes? This spicy bean salad is great as a meal, or as a side dish. I usually don’t recommend canned foods, but organic canned beans are quick and don’t contain chemical preservatives such as EDTA, instead they use citric acid. Beans are high in protein and carbohydrates, and the fresh vegetables will give you lots of vitamins and minerals.
Ingredients:
1 can black beans (organic)
1 can kidney beans (organic)
2 cups cherry tomatoes, halved
1 red pepper, chopped
1 jalapeno, diced
1 sweet onion, chopped
1/2 cup cilantro
1/2 cup arugula
1 ear of corn, cut off the cob
1 avocado, cubed
1 zucchini, cubed
Dressing:
1/8th cup olive oil
3 limes juiced
pinch of sea salt
1/4 tsp paprika
1/2 tbsp ground cumin & coriander
Combine all salad ingredients in a bowl and toss with dressing
