April 22, 2014Maple-Balsamic Glazed Salmon
A simple, yet nutrition and delicious dinner ready from start to finish in 20 minutes.
Total Time 20 minutes
Servings 4
Ingredients
- 400 g Wild salmon
- 1 yellow zucchini cut into large slices
- 1 red bell pepper cut into chunks
- 1 sweet onion cut into slices
- 2 stalks celery chopped
- 1/2 head broccoli cut in spears
- 1/2 bunch of black kale hand ripped
- 1 tsp olive oil
- 1 tbsp coconut oil
- fresh cracked black pepper
- 1 tsp balsamic vinegar
- 1 tsp pure maple syrup
- 1 tsp sea salk
Instructions

Pre heat oven to 400 F

Place fish on parchment paper and drizzle olive oil, balsamic vinegar and maple syrup on top.

Sprinkle 1/2 tsp sea salt

Place in oven for 20 minutes

In a separate pan, add coconut oil and warm

Chop vegetables into desired shape and add to pan all vegetables except broccoli and kale

Add cracked pepper and stir

Add broccoli once other vegetables are starting to soften and cook.

Add kale 3 minutes later
-
Cook for an additional 2-3 minutes to soften kale. Do not over cook.
Recipe Notes
Substitute any vegetables you like and place on bed of quinoa or wild black rice if desired.
