Mango Fennel Salad
A tart and tangy salad.Fennel falls into the same family as carrots, celery and parsley. Fennel has been found to help with intestinal cramping and can relieve gas. It's an excellent source of vitamin C, potassium and dietary fibre. It also contains phosphorous, folic acid, magnesium manganese, iron, calcium and molybdenum. Raw fennel pairs well with avocado and citrus. Try this recipe and let me know what you think!
Ingredients
- Salad
- 1/2 bulb fennel thinly sliced
- 1 mango sliced
- 1 English cucumber chopped
- 1 red pepper thinly sliced
- 1/2 head romaine lettuce hand shredded
- Cilantro Lime dressing
- 1/2 avocado
- 2 handfuls of fresh cilantro
- 2 limes juiced
- 1 tsp apple cider vinegar
- 1/4 tsp sea salt
Instructions

Wash, and cut all the veggies and put in a bowl

Prepare the Cilantro Lime dressing by placing all ingredients in a food processor or blender and puree
